The matured olive oil from Domaine du Calabrun comes from the same blend as the fruity green. Its particularity is that the olives are left to mature for ten days before being pressed. This technique gives the oil flavors of undergrowth, mushrooms and also cocoa. It finds its place most naturally in fish-based dishes, but it can also be served with vegetable dishes such as ratatouille or mashed potatoes.
