The matured olive oil from Domaine du Calabrun comes from the same blend as the green fruity one. Its uniqueness lies in the fact that the olives are left to mature for about ten days before being pressed. This technique gives the oil flavors of undergrowth, mushrooms, and also cocoa. It naturally fits best in dishes based on fish, but it can also be enhanced with vegetable dishes such as ratatouille or mashed potatoes.
